Butternut Squash Soup. An all year round soup that the kids will love as well. Use all organic ingredients.
- 1 butternut squash
- 1 clove garlic
- 1 piece ginger
- 1/4 piece raw turmeric
- 1 small scallion
- 1 can light organic coconut milk
- 3 Tablespoons hemp seeds
- 2 dates
- 1 1/2 teaspoons Celtic sea salt
- 1 teaspoon Garam masala
- Pinch of cinnamon
- Small amount of fresh parsley and handful of various seeds (pumpkin, sunflower, etc.) for garnish
Cook all ingredients in a pot for 30 minutes and then blend for 30 seconds in a blender.
Garnish with fresh parsley and seeds.
